Ingredients
  

  • For the Spicy Crab Filling:
  • 1 cup imitation crab meat surimi, shredded
  • 2 tablespoons Kewpie mayonnaise or regular mayo
  • 1 tablespoon sriracha adjust to taste
  • ½ teaspoon soy sauce optional, for extra umami
  • ½ teaspoon sesame oil optional, for a nutty aroma
  • For the Sushi Rice:
  • 2 cups sushi rice short-grain Japanese rice
  • 2 ½ cups water
  • ¼ cup rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • For Rolling the Sushi:
  • 4 sheets nori seaweed
  • 1 teaspoon sesame seeds optional, for garnish
  • ½ avocado thinly sliced (optional)
  • ½ cucumber julienned (optional)
  • For Serving:
  • Soy sauce
  • Wasabi
  • Pickled ginger gari

Instructions
 

  • Prepare the Spicy Crab Mixture
  • Shred the imitation crab into thin strands using your hands or a fork.
  • In a mixing bowl, combine the shredded crab, Kewpie mayo, sriracha, soy sauce (if using), and sesame oil. Mix well.
  • Adjust spice levels as desired and set aside.
  • Cook and Season the Sushi Rice
  • Rinse the sushi rice under cold water until the water runs clear.
  • Cook the rice in a rice cooker or on the stovetop following a 1:1.2 rice-to-water ratio.
  • Once cooked, let the rice rest for 10 minutes.
  • In a small bowl, mix rice vinegar, sugar, and salt. Gently fold this into the warm rice. Let it cool to room temperature.
  • Assemble the Sushi Roll
  • Place a bamboo sushi mat on a clean surface and cover it with plastic wrap.
  • Lay a sheet of nori (shiny side down) on the mat.
  • Wet your hands with water and spread an even layer of sushi rice over the nori, leaving a ½-inch border at the top.
  • Sprinkle sesame seeds over the rice (optional).
  • Flip the nori so that the rice is on the outside (for an inside-out roll).
  • Spread a line of spicy crab filling along the bottom third of the nori.
  • Add cucumber and avocado slices if desired.
  • Roll and Slice the Sushi
  • Using the bamboo mat, gently roll the sushi from the bottom up, applying slight pressure to keep it tight.
  • Once fully rolled, seal the edge by pressing gently.
  • Use a sharp knife dipped in water to cut the roll into 6-8 pieces.
  • Wipe the knife with a damp cloth between cuts for clean slices.
  • Serve and Enjoy!
